Thanks for the helpful list. We spent a few months resident in Lima and Tanta became a frequent go to for midweek dining, as did Pan Sal Aire. We never found a Nikkei place that warranted multiple visits (other than Maido, but that is in a league of its own.) We ended up with too much ‘torch taste’ no matter where we went, which we also experienced at Osaka, and speculated that since he was the OG perhaps the heavy torching trickled down from there. I’d toss out Awicha as one to consider as worthy of multiple visits - at least for us was one we’d return too on a future visit.

Excellent list. You're right, Peru has such an overabundance of exceptional foodie places. Have you tried Mangos at Larcomar? For my wife and I, the pisco sour and ceviche at Rosa Nautica excellent, plus the views are amazing. For meats, our experience at Fuego was amazing, both the service and the food.
